Overview: Glendalough Pot Still Irish Whiskey, available exclusively through Third Base Market & Spirits, exemplifies the artistry and tradition of Irish whiskey production. This technical description provides an in-depth look at the key characteristics and meticulous production processes that make Glendalough a cherished choice among whiskey enthusiasts.

Ingredients: Glendalough Pot Still Irish Whiskey is crafted from high-quality ingredients, including:

  1. Grains: A blend of malted and unmalted barley, along with other cereals, creates the unique and characterful flavor of pot still Irish whiskey.

  2. Yeast: Carefully selected yeast strains are employed during fermentation to influence the development of unique flavor compounds and the whiskey's overall character.

  3. Water: Pristine Irish spring water, sourced from the Glendalough Valley, plays a vital role in the production, ensuring purity and enhancing the whiskey's quality.

Distillation: The production of Glendalough Pot Still Irish Whiskey follows a meticulous distillation process:

  1. Milling: The grains are finely milled to create a mash, exposing starches for fermentation.

  2. Mashing: The milled grains are combined with water and heated to create a mash. Enzymes in the malted barley facilitate the conversion of starches into fermentable sugars.

  3. Fermentation: The mash undergoes fermentation in fermentation tanks, where chosen yeast strains initiate the process. Fermentation typically lasts several days, allowing yeast to convert sugars into alcohol and develop crucial flavor compounds.

  4. Distillation: The fermented mash undergoes distillation in traditional copper pot stills, known for their ability to capture and refine the unique pot still character. The resulting distillate is carefully collected and assessed for quality.

Blending and Aging: Glendalough Pot Still Irish Whiskey involves blending and aging processes:

  1. Barrel Selection: The distilled spirit is placed in a combination of ex-bourbon and sherry casks, carefully chosen to achieve the desired flavor profile. The blend may include various ages, with each contributing to the final character.

  2. Aging Duration: The whiskey is aged for varying periods, typically ranging from 3 to 7 years. This allows for the development of a well-balanced and complex flavor profile.

Tasting Notes: Glendalough Pot Still Irish Whiskey offers a delightful and characterful tasting experience. Tasting notes may include:

  • Appearance: The whiskey exhibits a golden amber hue, reflecting its maturation in a combination of casks.

  • Aroma: The nose is greeted with inviting aromas of malted barley, orchard fruits, honey, and hints of vanilla. There are subtle notes of oak and spice in the background.

  • Palate: On the palate, expect a harmonious blend of flavors. Creamy maltiness, green apples, and ripe pears are complemented by a gentle nuttiness and a touch of baking spices. The mouthfeel is velvety and well-rounded.

  • Finish: The finish is medium in length, with lingering notes of toffee, ginger, and a subtle oakiness, showcasing the whiskey's complexity and balanced character.

Wonderfully complex and interesting

A great sipper well worth the price. Actually a bit of a steal. If there's one single distiller that was a new name on me until recently and is now a favorite, it's Glendalough. I'll have to work my way through as many of their offerings as I can. This one has great malt, oak, vanilla, and char on the nose, working together perfectly. The palate brings up cookie, honey, and baking spices along with those notes. Tons of interest as a sipper. One of the harder bottles to save despite being the one I most wanted to save.
