Tasting Notes and Technical Description:

Visual Appearance:

Pouring into the glass, Valfather exhibits a straw-gold color, shimmering with reflections that recall the moody skies of the Orkney archipelago. The liquid shows a viscous quality, evidence of its full-bodied nature.

Nose (Aroma):

Upon nosing, Valfather reveals an intricate blend of aromas. The peat is present but not overpowering, offering a smoky undertone that pairs elegantly with layers of green apple and pear. Herbal notes of thyme and a gentle touch of vanilla contribute to its complex olfactory profile. A waft of sea salt whispers the tale of its island origin.

Palate:

On the palate, Valfather does not disappoint. The initial sip unveils a rich, creamy mouthfeel accompanied by an explosion of flavors. The herbal characteristics noted on the nose translate into a taste tinged with heather and dried herbs, making way for a mid-palate teeming with orchard fruits and a subtle caramel sweetness. A peppery spice emerges, providing a counterpoint to the whisky's inherent richness. The peat returns, woven seamlessly throughout the flavor journey, offering that unique Highland Park smokiness without overwhelming the other elements.

Finish:

Valfather's finish is long, dry, and contemplative, a fitting tribute to Odin's wisdom. The complexities of peat and spice dwindle slowly, giving way to a lingering oaky warmth and a final, ethereal hint of maritime brine.

A masterful concoction of balance and complexity, Highland Park's Valfather is a whisky of epic proportions, worthy of its mythological namesake. It stands as a testament to the capabilities of one of Scotland's most northern distilleries and can be found for those who seek it at Third Base Market & Spirits.

Does not disappoint!

Highland Park is quickly becoming a new favorite Scotch of mine. This offering certainly doesn’t disappoint. It provides a nice balance of peat, light smoke and fresh fruit, with a lingering finish reminiscent of apple skin. This paired nicely with plank grilled salmon and shrimp.
