Production: The creation of Highland Park 12 Year Viking Honour involves a time-honored production process:

  1. Ingredients: Local malted barley, pure Orkney water, and yeast form the foundation of this whisky, with an emphasis on quality ingredients.

  2. Mashing: The malted barley is mashed to extract fermentable sugars, resulting in wort.

  3. Fermentation: Yeast is added to the wort for fermentation, yielding alcohol and unique flavor compounds.

  4. Distillation: Highland Park employs traditional copper pot stills to distill the spirit, typically using a double distillation method.

  5. Maturation: The whisky matures for a minimum of 12 years in a combination of sherry-seasoned European oak casks and American oak casks. This dual cask maturation contributes to the whisky's character.

Appealing whisky, pretty bottle, too

Clear sweet notes on the nose and palate, without being cloying. Great value at this price. Lovely complex whisky with sweet and spicy floral notes on the nose, showing up again on the palate with a bit of shortbread and soft citrus. Nice woody finish. Very pleasant, easily worth several pours, and at this price, you can justify buying it often.

Good bottle to sip on a regular basis

Slightly peated mixed with a good balance of sweet and malt. It's a bottle I put up there with a Glenlivet 15 or the Glenfiddich 14 (which is much cheaper but not smoky). Hate the new bottle designs but that doesn't have an affect on the taste or price so can't take points away for that

A Great Go-To

The Highland Park 12 is a solid go-to whisky that belongs in everyone's collection. At this price, you can afford to enjoy it on a regular basis without breaking the bank. There is a slight hint of peat on the nose, complemented by a sweetness. With the first sip, you pick up on a sweetness like honey. The malt is satisfying in your mouth with a pleasant mouthfeel and long finish. The peat is not overpowering, and it't not a sweet malt either. Balanced and enjoyable. Also a good one to help introduce the peat you find in Scotch whiskys because the peat flavor is mild in this one. I give this one 5 stars not because it is the best you can get, but at this price point I recommend it highly.
