Overview: Glendalough Double Barrel Whiskey, available through Third Base Market & Spirits, is a testament to the art of blending and finishing Irish whiskey. This technical description provides an in-depth look at the key characteristics and meticulous production processes that make Glendalough a cherished choice among whiskey enthusiasts.

Ingredients: Glendalough Double Barrel Whiskey is crafted from high-quality ingredients, including:

  1. Grains: A blend of malted and unmalted barley, along with other cereals, contributes to the distinct character of this Irish whiskey.

  2. Yeast: Carefully selected yeast strains are used during fermentation to influence the development of unique flavor compounds and the whiskey's overall character.

  3. Water: Pristine Irish spring water, sourced from the Glendalough Valley, plays a vital role in the production, ensuring purity and enhancing the whiskey's quality.

Distillation: The production of Glendalough Double Barrel Whiskey follows a meticulous distillation process:

  1. Milling: The grains are finely milled to create a mash, exposing starches for fermentation.

  2. Mashing: The milled grains are combined with water and heated to create a mash. Enzymes in the malted barley facilitate the conversion of starches into fermentable sugars.

  3. Fermentation: The mash undergoes fermentation in fermentation tanks, where chosen yeast strains initiate the process. Fermentation typically lasts several days, allowing yeast to convert sugars into alcohol and develop crucial flavor compounds.

  4. Distillation: The fermented mash undergoes distillation in traditional copper pot stills, capturing the unique character of the spirit. The resulting distillate is carefully collected and assessed for quality.

Blending and Aging: Glendalough Double Barrel Whiskey involves blending and finishing processes:

  1. Barrel Selection: The whiskey is initially aged in American oak ex-bourbon barrels, where it gains its foundational character.

  2. Double Barrel Finish: After the initial aging, the whiskey is transferred to another set of barrels for finishing. These barrels may include former sherry casks, imparting additional complexity and flavor to the whiskey.

Tasting Notes: Glendalough Double Barrel Whiskey offers a delightful and harmonious tasting experience. Tasting notes may include:

  • Appearance: The whiskey exhibits a rich golden hue, influenced by the combination of bourbon and sherry cask finishing.

  • Aroma: The nose is greeted with inviting aromas of malted barley, honey, and orchard fruits, complemented by hints of vanilla, dried fruits, and a subtle nuttiness.

  • Palate: On the palate, anticipate a well-balanced blend of flavors. Sweet toffee, ripe apples, and honey are interwoven with gentle spice, oak, and a touch of dark chocolate. The mouthfeel is smooth and rounded.

  • Finish: The finish is medium in length, with lingering notes of caramel, cinnamon, and a subtle fruitiness, showcasing the whiskey's complexity and well-balanced character.

Packaging: Glendalough Double Barrel Whiskey is typically presented in an elegantly designed bottle that reflects its premium quality and the brand's commitment to tradition and craftsmanship.

Conclusion: Glendalough Double Barrel Whiskey, available through Third Base Market & Spirits, is a remarkable representation of traditional Irish whiskey blending and finishing. Crafted with precision, utilizing a blend of aged whiskeys, and enhanced through double barrel finishing, this whiskey offers a harmonious and characterful tasting experience. Known for its approachable proof and complex flavor profile, Glendalough continues to deliver authentic and enjoyable Irish whiskey expressions, making it a definitive choice for those seeking a taste of Ireland's whiskey heritage.

My favorite Irish at a fair price. Hard to find.

Remarkable complexity and interest at the price

This whiskey is good enough to invite comparison to more-expensive bottles. All the caramel, vanilla, and soft spices you might find in bottles costing double this. The notes are common to many good whiskies, so the points here are not for innovation, but because everything is harmonious and working so well together. At this price, this will likely be a near-permanent resident on my bar.
